THE RESET BUTTON: CUCUMBER GAZPACHO
A fresh and delicious variation of the traditional Spanish Gazpacho dish. This detox version is a lot healthier as it isn’t filled with breadcrumbs by The Reset Button Retreat
2 cucumbers, peeled and deseeded.
1 yellow pepper, deseed- ed
1 avocado, chopped.
4 spring onions
A few mint leaves – de- pending on your taste 200ml coconut yoghurt. 2-3 tbsp of white wine vinegar.
Tabasco to taste.
Salt & Pepper.
Chives to serve.
1. Blend cucumber, pepper, avocado, spring onions and mint in a food processor/blender. Be careful not to overpower the dish with too many mint leaves – the flavour can be strong, start with just one or two and add more to taste.
2. Mix in coconut yoghurt. Add Vinegar and Tabasco. Season to taste.
3. Serve with dollop of coconut yoghurt and a sprinkle of chopped chives.
