Spanish Summer Tuna Salad

A common perception of healthy eating is that every meal has to be a lettuce based salad and stupidly boring. I personally think that healthy eating doesn’t have to be dull, you can achieve your goals whilst enjoying all the foods you love and eating beautifully! I highly recommend giving this easy summer salad a go!

Ingredients

A handful of baby tomatoes
Black or green olives
15g Kidney Beans
15g Cannoli beans
1/2 Red pepper
1/4 red onion
1/2 a can Tuna in olive oil or freshly cooked
Mixed seeds
Pine nuts
Fresh Basil
Walnut oil
Olive oil

Method:

The night before slice the onion and baby tomatoes and add all beans together in a bowl. Add a spoonful of walnut oil, a spoonful of olive oil, a handful of chopped fresh basil and season to taste with salt and pepper. Cover with cling film and refrigerate. When you’re ready to eat simply mix in the rest of the ingredients and enjoy!
