PROTEIN CHEESECAKE – MY SECOND LOVE
I am in love with cheesecake and wanted to find a way to make it slightly healthy (I did say slightly), so I could enjoy it more frequently, so have come up with this recipe using my favourite protein – Supreme Nutrition Strawberries & Cream!
What you need:
250g Freefrom Digestive Biscuits
100g Avocado Oil Butter (melted)
1 Vanilla pod
300g Cream Cheese
30g Supreme Nutrition Strawberries & Cream
70g Icing sugar
285ml pot of cream
For the Toppping
400g Berries of choice
25g Icing Sugar
- To start – begin with the base. Butter and line a 23-25cm loose-bottom tin with baking paper. Crumble the digestives and pour in a bowl, adding the melted butter. Mix together thoroughly and add them to the tin – press down firmly to create an even layer. Chill in the fridge for 1-2 hours until firmly set.
- Scrape the seeds out of the vanilla pod and mix together with the quark, cream cheese, protein powder, and icing sugar. Mix with an electric mixer until smooth. Add the pot of cream and mix until all combined. Spoon on the mixture on top of the base and leave to set in the fridge overnight.
- When ready to serve – remove from tin and puree half of the berries of choice with a tablespoon full of icing sugar. Add the rest of the berries and the puree to top the cheesecake off.
