When starting a new diet plan or trying to change your unhealthy habits, it is essential to ensure you are providing your body with all the essential nutrients it needs. Most women cut out large food groups and become scared of fats and carbohydrates, but essential fats and low GI carbohydrates, which we find in products such as avocados and brown rice help the body to loose weight and control hunger. Just because you’re trying to loose weight or combating bad eating patterns, doesn’t mean you need to start starving your body.

One of my favourite ways to start the day is with Matcha Muffins for breakfast post tea and some of the key benefits of matcha are:

• Its packed with antioxidants including the powerful EGCg
• Boosts metabolism and burns calories
• Calms the mind and relaxes the body
• Is rich in fibre, chlorophyll and vitamins
• Enhances mood and aids in concentration
• Provides vitamin C, selenium, chromium, zinc and magnesium
• Lowers cholesterol and blood sugar

Plus, 1 serving of matcha is equivalent of drinking 9-10 cups of green tea!

These little gems are perfect hot or cold

HOW TO:

Preparation time: 8-10 minutes
Cooking time: 24 minutes
Servings: 8-10

Ingredients:

• 1 cup of oat flour
• 1 tbsp baking powder
• ½ cup of cane sugar
• 2 heaped tsp of matcha powder
• 1 cup of almond milk
• 1 egg
• 1 tbsp of agave syrup or honey
• 1 medium banana mashed
• Optional: choice of nuts chopped (I love added pistachio nuts on top)

Directions:

1. Preheat the oven to 350F
2. Whisk oat flour, baking power, sugar, matcha powder together, ensuring that there are no clumps
3. Stir the almond milk, egg and syrup together
4. Add the liquid to the flour mixture and combine until all is mixed through
5. Add the mashed banana into the mixture and allow to sit for 5 minutes
6. Spoon the mixture into a muffin tray lined with muffin cases
7. Bake for 24 minutes or until the muffins have risen and are fully cooked
