Blackberry Chia Pudding
Breakfast can be one of those tricky meals when trying to stick to a healthy eating plan. The tendency can be to turn to the easy option of cereal or toast, both starchy carbs which might satisfy you at the time, but will leave you hungry in just a couple of hours. Enter chia pudding! A simple, but filling, breakfast made from nutritious and protein packed chia seeds soaked overnight in a combination of coconut and rice milk! I like sweetening my pudding with freshly picked blackberries from the garden and toasted pecans and pumpkin seeds but the beauty of this breakfast is that it works well with whatever you have in the fridge/cupboard.
1/2 cup chia seeds
1 cup coconut milk
1 cup rice milk
Handful of blackberries
Handful of pecans and pumpkin seeds
1/4 tsp cinnamon
Method (Makes 2 Servings)
Soak the chia seeds in a bowl overnight with the milk and the cinnamon
Chop and lightly toast the nuts and seeds in the morning for a little extra crunch and flavour
Serve up your pudding (add a little extra milk if the consistency is too thick) and top with your nuts and chosen fruit, simple!
